Managing Food Allergies in CEC Kitchen Handbook

Children depend on staff in Children’s Education and Care (CEC) settings to provide a safe environment, including safe food. Parents must be able to trust that their child with food allergy is given the right food.

The All About Allergens: Managing Food Allergies in Children’s Education and Care Kitchen Handbook, developed by the National Allergy Council, provides practical, evidence-based guidance to help CEC services safely plan, prepare and serve food to children with food allergies.

This book is for anyone who plans, makes or serves food or supervises meals and drinks in CEC services. This includes managers, educators, cooks, chefs and volunteers.

This book should be used alongside the National Allergy Council’s Best Practice Guidelines for Anaphylaxis Prevention and Management in Children’s Education and Care and the free All about Allergens for CEC online food allergen management training.
